Veal (Turkey or Deer) Marengo

Ingredients

  • 1 to 1 1/2 pounds veal cut in bite size pieces

  • 1 28 oz. can stewed tomatoes with most of juice removed

  • 3 large onions sliced thick

  • 2 cloves garlic minced

  • 1/2 cup white wine

  • 2 4 oz. cans mushroom stems and pieces drained

  • 1 tablespoon oil

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/4 teaspoon oregano

Directions

  • Pam pressure cooker, heat and add oil.

  • Brown veal.

  • Add other ingredients (except mushrooms).

  • Mix.

  • Cook 15 minutes.

  • Cool down.

  • If sauce is too thin, add cornstarch mixed with some of the juice for the stewed tomatoes.

  • Serve over rice.
