Turkey Soup

It makes an extra good soup if you have stock as well. Stock is what is left in the roasting pan, cooled, and fat removed after congealing. It’s also good to add any chicken stock you’ve saved from other cooking.


  • 1 turkey carcass (with some meat left on)

  • turkey neck and giblets

  • left over pieces of turkey

  • 1 pound carrots sliced thin or grated

  • 4 large onions sliced thin

  • 1 head celery leaves and stalks, sliced thin

  • 1 bunch parsley minced fine

  • salt to taste (but put some salt in at the beginning of cooking)


  • Place turkey carcass, neck, giblets and stock
