Sausage, Peppers and Mushrooms

  • 3 pounds Italian sausage (sweet)

  • 4 pounds red and green bell peppers mixed, sliced

  • 1/4 cup olive oil

  • 1 clove garlic cut in half

  • 1 teaspoon parsley

  • salt and pepper

  • 3 8 oz. cans mushrooms (or 1 lb. fresh, sliced)


  • In skillet place sausage and about 1/2” of water.

  • Bring to a boil and cook over high heat until water evaporates.

  • Lower heat and allow sausages to brown, turning frequently.

  • Drain off fat and discard.

  • Meanwhile, in second skillet, place sliced peppers in heated oil, along with garlic, parsley, salt and pepper and cook over medium heat until tender.

  • Mix peppers with the sausage, and mushrooms and cook together for 5 to 10 minutes.
