3 pounds Italian sausage (sweet)
4 pounds red and green bell peppers mixed, sliced
1/4 cup olive oil
1 clove garlic cut in half
1 teaspoon parsley
salt and pepper
3 8 oz. cans mushrooms (or 1 lb. fresh, sliced)
In skillet place sausage and about 1/2” of water.
Bring to a boil and cook over high heat until water evaporates.
Lower heat and allow sausages to brown, turning frequently.
Drain off fat and discard.
Meanwhile, in second skillet, place sliced peppers in heated oil, along with garlic, parsley, salt and pepper and cook over medium heat until tender.
Mix peppers with the sausage, and mushrooms and cook together for 5 to 10 minutes.
