Potato Pancakes from Leftover Mashed Potatoes

Ingredients
1 to 2 cups mashed potatoes
1/2 onion chopped fine
1 egg
1/2 cup bread crumbs plus more to dip pancakes in
Directions
Heat frypan with cooking oil nice and hot.
Mix all ingredients including bread crumbs.
From into patties and dip both sides in bread crumbs.
Fry until golden on each side.
Lay on paper towels to soak up excess oil and serve hot with applesauce and sour cream on the side.
As Mr. Food says “Ooooooh…it’s so goooood!”
