Potato Pancakes from Leftover Mashed Potatoes

  • 1 to 2 cups mashed potatoes

  • 1/2 onion chopped fine

  • 1 egg

  • 1/2 cup bread crumbs plus more to dip pancakes in


  • Heat frypan with cooking oil nice and hot.

  • Mix all ingredients including bread crumbs.

  • From into patties and dip both sides in bread crumbs.

  • Fry until golden on each side.

  • Lay on paper towels to soak up excess oil and serve hot with applesauce and sour cream on the side.

  • As Mr. Food says “Ooooooh…it’s so goooood!”
