Potato Cakes

Ingredients
3 potatoes (large)
Romano cheese grated - handful
6 eggs
cracker meal
garlic
salt and pepper
fresh parsley
Directions
Cube potatoes and boil until tender.
Mash and add ingredients.
Don’t over add cracker meal.
Mixture should not be too tight.
Drop spoonful into hot olive oil (about 1/2”) and fry until golden brown and cooked in the center.
