Potato Cakes

Ingredients

  • 3 potatoes (large)

  • Romano cheese grated - handful

  • 6 eggs

  • cracker meal

  • garlic

  • salt and pepper

  • fresh parsley

Directions

  • Cube potatoes and boil until tender.

  • Mash and add ingredients.

  • Don’t over add cracker meal.

  • Mixture should not be too tight.

  • Drop spoonful into hot olive oil (about 1/2”) and fry until golden brown and cooked in the center.
