Perfect Roast Beef

Roast your beef in a preheated 500� oven for five minutes per pound. At the end of that time turn the oven off and leave the door closed for 2 hours. That’s all there is to it. Your beef will be beautifully pink all the way through and not overdone anywhere. It will also have a lovely dark finish and will make great pan gravy. (Just remove the roast, add a quart or so of good white stock and boil until reduced by half or more. Strain, skim and serve.
