Penne with Creamy Garlic Sauce

This tastes a lot like Alfredo Sauce with a lot less fat and calories

variations: add 1/2 to 1 pound of scallops or shrimp. Saute with the garlic and butter.

Ingredients

  • 1 pound penne or ziti

  • 2 tablespoons butter or margarine

  • 2 cloves garlic minced

  • 2 tablespoons all-purpose flour

  • 3/4 cup chicken broth (or beef broth)

  • 3/4 cup milk or light cream

  • 2 teaspoons dried parsley

  • slat and pepper to taste

  • 1/3 cup Parmesan cheese

Directions

  • Cook pasta according to package directions.

  • Drain.

  • Meanwhile, in a small saucepan, melt butter.

  • Add garlic.

  • Cook over medium heat 1 minute.

  • Add flour.

  • Cook 1 minute stirring constantly.

  • Stir in broth and milk.

  • Cook, stirring frequently, until sauce boils and thickens.

  • Add parsley, salt, pepper, and cheese.

  • Stir until cheese is melted.

  • Toss pasta with sauce.

  • Serve immediately.
