1/2 pound angel hair pasta cooked and drained
4 eggs or 1 cup egg substitute (Second Nature brand is best)
1/4 pound ham chopped or cut in small pieces
chopped parsley (a piacere o quanto basta)
1/2 cup mozzarella cheese chopped or cut into small pieces
1/2 cup cheddar cheese chopped or cut into small pieces
grated parmesan cheese a piacere
Place cooked pasta in large bowl.
Add eggs that have been beaten until foamy.
Add remaining ingredients and mix thoroughly until all blended.
The choice of frying pan in important in that you don’t want a thin flat pie.
You want it to be a bit on the high side.
So select a pan that will give it some height.
Spray pan with Pam, heat, and at medium heat place pie in pan and brown on one side then with a flat platter turn pie on platter and then spray pam again and slide pie into pan and brown the other side.
Make sure heat is not too high or pie will brown too much on the outside and not cook thoroughly on the inside.
