Pasta Pie Ala Elvira

  • 1/2 pound angel hair pasta cooked and drained

  • 4 eggs or 1 cup egg substitute (Second Nature brand is best)

  • 1/4 pound ham chopped or cut in small pieces

  • chopped parsley (a piacere o quanto basta)

  • 1/2 cup mozzarella cheese chopped or cut into small pieces

  • 1/2 cup cheddar cheese chopped or cut into small pieces

  • grated parmesan cheese a piacere


  • Place cooked pasta in large bowl.

  • Add eggs that have been beaten until foamy.

  • Add remaining ingredients and mix thoroughly until all blended.

  • The choice of frying pan in important in that you don’t want a thin flat pie.

  • You want it to be a bit on the high side.

  • So select a pan that will give it some height.

  • Spray pan with Pam, heat, and at medium heat place pie in pan and brown on one side then with a flat platter turn pie on platter and then spray pam again and slide pie into pan and brown the other side.

  • Make sure heat is not too high or pie will brown too much on the outside and not cook thoroughly on the inside.
