Oven-fried Chicken

for low-fat chicken remove skin before coating.

Ingredients

  • 1 tablespoon margarine or butter or butter spray

  • 1 cup Bisquick baking mix or pancake mix

  • 1 1/2 teaspoons paprika

  • 1 1/4 teaspoons salt

  • 1/4 teaspoon pepper

  • 1 broiler-fryer chicken cut up

Directions

  • Heat oven to 425°.

  • Melt margarine in oblong pan 13x9x2”.

  • Mix baking mix, paprika, salt and pepper; coat chicken by placing coating mixture in plastic bag.

  • Place chicken, skin sides down, in pan.

  • Bake uncovered 35 minutes.

  • Turn; bake until done, about 20-30 minutes.
