Moroccan Meatballs

Ingredients
2 tbsp parsley
2 tbsp cilantro
1 tbsp paprika
1 tbsp cumin
1 tbsp salt
1 tsp cayenne
1 tsp cinnamon
1 tsp garlic
3 cups basmati rice
4 large tomatoes
1 large onion
4 lbs ground beef
Directions
Begin cooking the basmati rice
Combine spices (parsley, cilantro, paprika, cumin, salt, cayenne, cinnamon, garlic) and divide into two portions (each around 4 tbsp)
Chop tomatos, onion, and one portion of spices (around 4 tbsp) in a blender until homogenized but still textured
Pour into a large saucepan and heat on medium
Meanwhile, knead the other portion of the spices into the ground beef
Roll the ground beef into spheres (around 2-3” in diameter), and add to sauce
Simmer the tomatos and meatballs covered for around 10 minutes
Serve in a bowl over basmati rice
