Dutch Baby Pancake
4 Servings This recipe comes from Peggy’s mom, Lucille Celestino This recipe cannot be doubled to save more. Use completely separate recipe in another pan.
Ingredients
1 cup milk
2 eggs
1/2 teaspoon lemon rind
2/3 cup flour unsifted
2 tablespoons sugar
1/2 teaspoon salt
Directions
Blend all ingredients in bowl or blender, beating well.
Put 1/4 cup butter or margarine in a pie plate or cake pan and place in the oven until melted.
Pour batter over, covering the butter and bake until it rises and turns golden brown - about 20 to 30 minutes at 350°.
To serve:
Cut into 4 portions and sprinkle with powdered sugar and lemon juice.
(also good with fresh fruit/whipped cream/syrup/more butter etc.)
