Creamy Cheesecake

8 Servings Recipe is from”Eat This…It’ll Make You Feel Better”by Dom Deluise Crust:

Ingredients

  • 1/4 pound butter

  • 1 1/2 cups graham cracker crumbs

  • 1/3 cup powdered sugar

  • 1/2 cup pecans crushed

  • {“Cheesecake filling”=>nil}

  • 3 8 oz. packages cream cheese (I use light)

  • 1 cup sugar

  • 1 1/2 teaspoons vanilla

  • 4 eggs

  • {“Topping”=>nil}

  • 1 pint sour cream

Directions

  • Crust:

  • Melt butter and add to graham cracker crumbs, sugar and crushed pecans.

  • Line bottom and sides of springform pan with mixture, packing it down firmly.

  • Filling:

  • Put all ingredients into a food processor and mix well, using metal blade. Pour into springform pan and bake at 350° for 50 minutes.

  • Remove Cheesecake.

  • Do not turn oven off.

  • Topping:

  • Top cheesecake with sour cream and return to oven for 5

  • more minutes.

  • Let cool.

  • Chill overnight.
