Cranberry-Orange Muffins

Ingredients
2 cups flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt optional
1 egg slightly beaten (or 1/4 cup egg substitute)
1 teaspoon orange peel grated
2/3 cup orange juice
1/4 cup canola oil
1 to 1 1/2 cups cranberries
1/4 cup walnuts chopped
Directions
Spray muffin tins with Pam.
In large bowl combine flour, sugar, baking powder and salt.
In small bowl, blend egg, orange peel, orange juice and oil.
Stir into flour mixture until moistened.
Stir in cranberries and nuts.
Dough will be a bit stiff.
Spoon into muffin tins and bake in a 400° oven for 18-22 minutes or until toothpick comes out clean.
For Apple Muffins: substitute skim milk for orange juice.
Use apples (cubed) instead of cranberries and eliminate orange peel.
