Cranberry-Orange Muffins

Ingredients

  • 2 cups flour

  • 3/4 cup sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt optional

  • 1 egg slightly beaten (or 1/4 cup egg substitute)

  • 1 teaspoon orange peel grated

  • 2/3 cup orange juice

  • 1/4 cup canola oil

  • 1 to 1 1/2 cups cranberries

  • 1/4 cup walnuts chopped

Directions

  • Spray muffin tins with Pam.

  • In large bowl combine flour, sugar, baking powder and salt.

  • In small bowl, blend egg, orange peel, orange juice and oil.

  • Stir into flour mixture until moistened.

  • Stir in cranberries and nuts.

  • Dough will be a bit stiff.

  • Spoon into muffin tins and bake in a 400° oven for 18-22 minutes or until toothpick comes out clean.

  • For Apple Muffins: substitute skim milk for orange juice.

  • Use apples (cubed) instead of cranberries and eliminate orange peel.
