 
    
  Cranberry-Orange Muffins

Ingredients
- 2 cups flour 
- 3/4 cup sugar 
- 2 teaspoons baking powder 
- 1/2 teaspoon salt optional 
- 1 egg slightly beaten (or 1/4 cup egg substitute) 
- 1 teaspoon orange peel grated 
- 2/3 cup orange juice 
- 1/4 cup canola oil 
- 1 to 1 1/2 cups cranberries 
- 1/4 cup walnuts chopped 
Directions
- Spray muffin tins with Pam. 
- In large bowl combine flour, sugar, baking powder and salt. 
- In small bowl, blend egg, orange peel, orange juice and oil. 
- Stir into flour mixture until moistened. 
- Stir in cranberries and nuts. 
- Dough will be a bit stiff. 
- Spoon into muffin tins and bake in a 400° oven for 18-22 minutes or until toothpick comes out clean. 
- For Apple Muffins: substitute skim milk for orange juice. 
- Use apples (cubed) instead of cranberries and eliminate orange peel.
