Coconut Macaroons

Ingredients

  • 1 egg white

  • 1/4 teaspoon vanilla

  • dash of salt

  • 1/3 cup sugar

  • 1/2 cup shredded coconut

Directions

  • Beat egg white with vanilla and salt until soft peaks form.

  • Gradually add sugar.

  • Beat until stiff.

  • Fold in coconut.

  • Drop by teaspoon on greased cookie sheet.

  • Bake in 325° oven for 20 minutes.

  • Remove to rack and cool.
