Chicken, Scallop, or Shrimp Lo Mein

Ingredients

  • 1/4 pound spaghetti cooked and drained

  • 1 pound boneless chicken breasts cut into bite size pieces OR

  • 1 pound scallops OR

  • 1 pound shrimp

  • 1 6 1/2 oz. can mushrooms

  • 1 6 oz. package frozen pea pods defrosted

  • 2 tablespoons cooking oil

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1/2 teaspoon minced garlic

  • 1 6 1/2 oz. can bamboo shoots

  • 1 6 1/2 oz. can bean sprouts

  • {“Marinade”=>nil}

  • 1 tablespoon wine

  • 2 tablespoons soy sauce

  • 1 tablespoon cornstarch

Directions

  • Marinate chicken or seafood for 10 minutes or more.

  • Pam a large pan or pot. Heat oil (1 tbs.) Add seafood or chicken, garlic and pea pods.

  • Cook 3-5 minutes.

  • Add more wine if needed and more soy sauce to taste.

  • Add all remaining ingredients when chicken or seafood is cooked.

  • Stir, tasting for needed soy sauce.

  • Heat thoroughly.
