  • vegetable oil

  • catfish fillets


  • Pan-frying directions:

  • Heat a small amount of vegetable oil or margarine or both in a frying pan until very hot but not smoking. (set electric skillet to 350°).

  • Coat fish with seasoned flour if desired.

  • Fry fish 10 minutes for each inch of thickness, turning it halfway through cooking time.

  • Cook until fish is firm, flaky and tender.
