Bran Muffins

Option: In place of yogurt, place 2 teaspoons of vinegar in a 2 cup measure. Fill to 1 1/2 cups with milk. Omit water from recipe. Variation: Add 1 cup mashed banana (omit water) Add 1 cup blueberries (fresh or frozen) Add 1 cup applesauce, 1/4 tsp nutmeg, and 1/2 tsp cinnamon (omit water) Add 1/2 cup chocolate or carob chips Add 1/2 cups raisins

Ingredients

  • 2 egg whites or egg substitute

  • 1/4 cup oil or I use 1/2 cup applesauce instead)

  • 1/4 cup honey

  • 1/4 cup molasses

  • 1 1/2 cups yogurt *

  • 2 teaspoons baking soda

  • 1/2 teaspoon salt (scant)

  • 1 teaspoon cinnamon (more or less to taste)

  • pinch of nutmeg and cloves

  • 2 cups bran (unprocessed)

  • 1 1/2 cups whole wheat flour

  • 1/4 cup water

Directions

  • Mix first 5 ingredients together in a bowl.

  • Combine to dry ingredients and add to the ingredients in the bowl.

  • Stir in water.

  • Line muffin pan with muffin liners.

  • Fill each 2/3 full.

  • Bake at 350° for 10 to 15 minutes.
